There's Something About Mary!
The Speckle Park cattle breed exemplifies Canadian innovation, tracing its roots back to Mary Lindsay, a rancher from Saskatchewan.
Born in Scotland and moving to Canada in 1906, Mary’s passion for cattle led her to spot a unique speckled heifer in her father’s 1937 herd. This heifer had the rare ability to produce speckled offspring regardless of the sire.
Mary capitalized on this trait by crossing the heifer with Teeswater Shorthorn for mothering skills, Aberdeen Angus for marbling and tenderness, and White Park for hardiness to withstand the Canadian Winters. Her breeding program, alongside other ranchers, stabilized these traits, resulting in consistently high-quality beef cattle.
I00 years after Mary's birth, in 2006, Speckle Park was officially recognized as a distinct pure breed, marking a milestone in Canadian agriculture. The breed is known for exceptional mothering, feed efficiency, and superior marbling, making the beef tender and full of flavor. Speckle Park beef, especially from Speckle Park Reserve, is a favorite among chefs for its smaller carcasses that allow for perfect steaks off the grill every time and exceptionally high marbling and mouth feel.
